Just 3,000 bottles of the exceptional 2016 vintage were released. The grapes for this exceptional Chianti Classico come from vines that grow in the south-west at an altitude of between 350 and 480 metres above sea level. The soil here is characterised by galestro and limestone. Rich, deep dark ruby colour with a velvety sheen. Multi-layered, concentrated aromas of plum, black cherry, spices and menthol. Ipsus ferments very traditionally for three weeks on the skins and matures 50% in new tonneaux and 50% in stainless steel as well as eight months in cement barrels. On the nose, rose petals, mint, blood orange and sweet tobacco. On the palate, the 2019 vintage is denser than many other Chianti Classico and it is very grippy in the process, with its pure, blood orange-infused, lush red fruits on the characterful finish. After a few hours in the air it becomes more open, more floral and only then does Ipsus show its true and most aristocratic face and a stunningly classic structure. This wine from the single vineyard of the same name is probably the most opulent of the house's selection line. On the nose, an almost brushstroke-wide presence of ripe fruit, spices and hints of crushed rock. On the palate, impressive suppleness, complexity and richness, plus a whole bouquet of dark fruit flavours flanked by firm, structured tannin. The Merlot content gives it additional depth and power.
