The acronym COS stands for the initials of the three founders of the winery: Giambattista Cilia, Giusto Occhipinti and Pinuccia Strano. As early as 1985, the triumvirate became a duo, consisting of Giambattista Cilia and Giusto Occhipinti, who have passionately shaped the Sicilian success story of the COS winery for more than 40 years.
It's hard to imagine now that the owners' original background was architecture instead of oenology. This initial wine project has now been a fixture of the Sicilian wine world for decades, and vintage after vintage has received great acclaim – and not just from the international critics, of course.
The mission of the tireless duo is as simple as it is ambitious: to produce wines that could not better reflect the original Sicily. The largely biodynamic cultivation, the unique terroir and the exclusively autochthonous grape varieties form the untouched and natural basis of the wines. In its production, COS is both uncompromisingly traditional and modern at the same time. In 2000, the first wines were vinified in clay amphorae. Buried in the soil, the wine remains on the mash until it is ripe and then finds its perfection in wooden barrels.
