This rare extra virgin olive oil comes from Veneto, the trees of the Grignano variety grow around Fittà near Soave. The fruit for this pure and certified organic olive oil is hand-picked and gently cold-pressed. It flows out of the bottle in a rich, golden yellow colour with light green reflections. The nose is delicately fruity and very fragrant, with notes of lemon leaves and white flowers. On the palate, it has a slight sharpness and the pleasant flavour of almonds and citrus fruits. "There are around 1,500 olive trees on our estate. Many of them are centuries old. And we feel an obligation towards them, a historical memory that flows through our veins today. I would never dare to say that our oil is the best oil in the world. There is no such thing as the best oil in the world. I would say that there are certainly others who look after their trees and their olives like we do, but none who do it more than we do.
Our trees have always been grown organically. They are carefully pruned every two years. The olives are all picked by hand and the day's harvest is pressed every evening. The oil is decanted and naturally clarified until February/March and bottled without filtration. Our volcanic soils give it sweetness, finesse and flavour. The result is an olio that is rather restrained and delicately fruity in flavour, but still has an extraordinary complexity with herbal notes and distinct bitter tones. The olive oil from the legendary Tenuta San Guido is in no way inferior to the world-famous wines, reflecting the multi-layered soul of the winery. The Leccino, Moraiolo, Pendolino and Frantoio varieties thrive on around 110 hectares of olive groves in Bolgheri near Livorno. On the demanding soil, the trees are not arranged in the traditional way, but grow in rows between fields and vineyards, as is typical of Tuscan agriculture.
This outstanding Olio di Oliva Extra Vergine, which is obtained exclusively by mechanical means, is greenish-yellow in colour with shimmering reflections. Its flavour is balanced yet complex.
