    The fruit for this oil is harvested by hand in the first decade of November. Immediately after harvesting, the oil is cold-pressed to preserve the fresh flavours of the not fully ripened fruit. Before bottling, the oil is filtered through cotton wool to separate it from the fruit water deposit, which would affect the original quality over time.

    This piquant olive oil impresses with its extremely low acidity and excellent flavour. It is a true speciality of the Giachi house, for which they have received worldwide recognition. SUPERIORE.DE
