DiLidia matures in barrels previously used for Marsala production in the Canelli wineries in Sicily. Wine connoisseurs all over the world appreciate the noble grappa and brandies of the Berta distillery. The foundation stone for the family business was laid shortly after the Second World War by the enologist Paolo Berta in the vibrant heart of the Piedmont hills in Nice Monferrato, where the rural traditions of the Langhe and Monferrato meet. After it had become too cramped in the old factory in the course of time, a modern distillery in Casalotto di Mombaruzzo started operation in 2002.
From the very beginning, the Berta distillery has been refining distillates from its own vineyards as well as fresh and healthy pomace from top regional winegrowers using innovative control systems. Of particular quality are grappas made from the skins of Moscato, Barolo and Barbera grapes. The fires have a great personality, are never ostentatious, but always unmistakably elegant and profound. Today, Gianfranco and Enrico Berta run the business of the northern Italian distillery, famous for its love of land and local culture, which also includes a natural park and a museum of distilling art, with great success.
In order to ensure the best possible preservation of the marc during transport and storage, the Berta family has developed a collection system with special containers made of food-compatible plastic. After the fermentation of the predominantly firm grape residues in the cellar, a carefully supervised manual process follows. As soon as the flask is full, the master distiller allows hot steam to flow through the moist skins of the pomace. In this way, the alcohol previously produced during fermentation is extracted. The distillates are first stored in stainless steel tanks and then in barrels of various types of wood. Their refinement can extend over a period of up to a decade.
Gianfranco and Enrico have achieved a worldwide breakthrough with the long storage of grappa in French oak wood. Before that, in the late 19th century to be precise, Francesco Berta had taken great care of the vineyards and cellars as well as the family's clientele from an early age. It was with great passion that he laid the foundations for the great success of the northern Italian distillery. The most important principle of the Berta family could perhaps be this: Grappa is not just a simple digestif, but a great distillate that is ideal for tasting and meditating. SUPERIORE.DE
