Angelo Gaja has been internationally recognized for decades as THE pioneer, magician and ambassador of Italian wine. He is one of the most important figures of light in the world of wine and is considered the first Italian producer with modern cellar technology. The precision of his wines, his power of words, the commercial skill and charisma ... his irrepressible striving for quality and the always clearly contoured style set international standards to this day and the signature can also be seen in his noble brandies, which are created without exception from his fresh marcs.
Angelo Gaja has his fine grape marc grappas produced by Gaja, Ca'Marcanda and Pieve Santa Restituta in the Distilleria Cooperativa del Barbaresco, founded in 1980. The distillation period begins around mid-September and ends in November. After fermentation, the still soft and juicy marc is prepared for distillation, which is carried out slowly with a discontinuous vacuum copper still at below 70°C to preserve the fragrance and aromas of the distillate. The result is a distillate with an alcohol content between 70 and 75% vol. which is diluted with distilled water before bottling until the alcohol content reaches the desired level.
The result is, on the one hand, a white grappa with a strong, full and juicy taste, while another part of the production is destined for subsequent refinement in small wooden barrels with a capacity of 225 liters for about a year. After this period, the desired alcohol content is also achieved by adding distilled water. This aging process gives the final product a hue of shiny amber and a softer, rounder, more harmonious and persistent taste. SUPERIORE.DE
