Carte Noire is a highly limited Ligurian drip oil, which is obtained using a special process. Only completely intact olives are used for this. After grinding them between granite stones, the paste is spread on mats. These are placed on top of each other, after which the olive oil obtained in this way runs downwards without pressure and is collected there. The result is a mild oil, not without certain rustic notes, with a slight sweetness and hints of spices, almonds, pine nuts, apple and vanilla. Balduccio is made up of around 9,000 organically cultivated olive trees, all located on the picturesque Montalbano hills between Florence and Montecatini Terme, and an oil mill that is so popular with local farmers that the most popular dates for pressing between 15 October and 15 November have been fully booked on the waiting list since the summer. This is because Balduccio not only presses its own olives, but also makes its modern technology available to other olive producers. Over the last 20 years, Balduccio has gained recognition and respect as an oil mill among local producers. It is not only the customers who are impressed by the quality. The ambition to produce top-quality oils is also increasingly inspiring other olive growers.
And the truly excellent quality of the Balduccio extra virgin is no coincidence. The Montalbano terroir produces high-quality, aromatic olives. However, the transformation of the natural qualities into a clean, fruity olive oil typical of the terroir is only possible because Andreas März and his sons have been working for years on improving the quality of olive oil and consistently putting their findings into practice.
The Balduccio oil has a subtle aroma of green almonds, artichokes and fresh, green olives; in the mouth, thanks to the high Moraiolo content, it tastes strong and full-bodied, green-fruity and actually only subtly bitter; the best comes at the end: an impressive pungency, given by the extremely high polyphenol values of this vintage. "There are around 1,500 olive trees on our estate. Many of them are centuries old. And we feel an obligation towards them, a historical memory that flows through our veins today. I would never dare to say that our oil is the best oil in the world. There is no such thing as the best oil in the world. I would say that there are certainly others who look after their trees and their olives like we do, but none who do it more than we do.
Our trees have always been grown organically. They are carefully pruned every two years. The olives are all picked by hand and the day's harvest is pressed every evening. The oil is decanted and naturally clarified until February/March and bottled without filtration. Our volcanic soils give it sweetness, finesse and flavour. The production of high-quality olive oils at Pandolfa dates back to the 16th century. The olives all come from the company's own olive groves around Predappio. Intense, bright yellow-green colour. The aroma is reminiscent of freshly picked olives with an intense flavour of wild herbs. Honestly. There is no other product with so much confusion due to incorrect designations. Tests appear to be constantly more alleged "experts"who then highly rate a supermarket oil that actually smells rancid. There are strict regulations, but they are not checked properly, because more than 90% of the extra virgin available on the market do not deserve this designation at all. Hard to believe. That's true.
And the reason is obvious: on one hectare - about one and a half football fields - there are on average less than 50 olive trees in the best Italian olive regions such as Tuscany, Puglia, Umbria or Liguria. If one calculates 6-7kg olives per tree, then this is a good litre extra virgin, so we are talking about a hectare yield of just 50-60 litres extra virgin olive oil. The production costs are therefore usually more than 10 euros/litre. However, a winegrower produces about 5,000 litres of wine on the same area. From this point of view, the production of really high-quality Extra Vergine is a clear case of hobby. Conversely, a supermarket oil that costs 5 euros (or less!) per 0.5-litre bottle and has the label "Extra Vergine" never be real.
How do you recognise good olive oil?
Good extra virgin olive oil is green, rarely tending to yellowish. It smells fresh and of plants, like freshly cut grass, meadow herbs, after fresh green olives, some sorts also after artichokes and tomato panicles. It also tastes fruity green, is sometimes bitter to bitter in the finish and scratches a little. If the oil smells of butter, nuts or even cheese, it is oxidized and faulty.
Forget the beautiful old mill with the big stone wheels.
Even if one likes to show these spectacular old structures to tourists, no good oil comes from such mills. Extra virgin qualities can only be obtained from carefully harvested olives that are harvested as quickly as possible, within a few hours, in the not at all "picturesquely" the stainless steel looking press. And if the olives are never heated above 27 degrees during pressing, we speak of cold-pressed - these are all good olive oils today.
