St. John's Eve on 24 June is traditionally the day in Italy when the still unripe walnuts are harvested for Christmas. This time represents the ideal balsamic ripeness of the fruits, which are carefully selected, harvested by hand and then conscientiously prepared. This is followed by an infusion of cinnamon, lemon peel, cloves and sugar, followed by a further maceration period to extract the aromas from the botanicals. The grapes are harvested at the end of August when they are well ripe and then dried in 5 kg crates at 23⁰C in the fruit cellar. After about 40 days, when half of their weight has been lost, the grapes are pressed and the resulting must, which is particularly rich in sugar, ferments slowly at 18°C for over a month in stainless steel vats, where it remains until bottling.

The harvested Malvasia grapes remain in shaded drying chambers for several weeks under good ventilation. Without moisture and hot sun, the grapes dry slowly and thus retain their acidity and very moderate alcohol levels. Capofaro is an impressive dessert wine that comes from vines that once belonged to the late winemaker Carlo Hauner, who made Malvasia from the island of Salina famous.

For the production of Badia a Coltibuono Grappa Riserva, our own Sangiovese marcs are distilled by hand at low temperature with indirect steam after a gentle pressing. This process preserves the aromas of the fresh marcs in the grappa. The grappa is produced at the Nannoni distillery in Paganico, where many of Italy's best wine producers have their grappa distilled.
