The Aleatico grapes for this very small edition (< 500 hand-numbered bottles) dry slightly on the vine when they are harvested. They are then subjected to further drying in well-ventilated rooms for about 45 days, as in the production of Amarone. Aqua Vitae is the result of the collaboration between Distilleria Artigiana di Gioacchino Nannoni, which directly takes care of the entire process of distillation, maturation and bottling, and Azienda Agricola di Montevertine, which supplies the Sangiovese marc from the vineyard "Le Pergole Torte". After steam distillation, the wine is matured for about four years in oak Caratelli casks. It is rich, elegant and velvety smooth with a pronounced wild berry flavour.

With "Cru Monovitigno Pignolo", the Noninos are taking part in the "Omaggio a Venezia" project, an initiative involving prestigious Italian brand producers such as Alessi, Loro Piana, Missoni, Tod's, Trussardi and others. "Omaggio a Venezia" aims to help the city fathers of Venice to preserve the artistic and architectural heritage, this unique and unmistakable style of Venice.

The exposed location of the estate on the Fennberg at around 1,000 m above sea level, with late autumn morning dew and high humidity, provides the ideal conditions for the development of noble rot (botrytis cinerea), which naturally leads to an additional concentration of grape sugar. The raisin-like dried grapes are harvested from mid to late December. After gentle pressing of the grapes, alcoholic fermentation takes place in small steel tanks, where the young wine rests on the fine yeast for around six months. The bottled wine matures in the cellar for another five years.

This Müller-Thurgau is a full-bodied late harvest (vendemmia tardiva) with considerable depth. It is dense and persistent and surprises with a buoyant freshness. The balanced interplay between minerality and strong body gives the wine its lightness and grants it good ageing potential. Notes of honey and lime in the finish make you want to take the next sip.
