“Rimosso” Vino Frizzante Lambrusco di Sorbara DOC 2023 secco
The first alcoholic fermentation of the must takes place in steel vats on the fine lees at a controlled temperature and after a waiting period of at least six months, the wine is bottled. The bottles remain at a constant temperature of 12°C so that the wine can undergo its second fermentation and mature on its own yeasts, which remain at the bottom of the bottle as a light sediment (note: it is not filtered!).
An animating cherry red colour with violet reflections and a yeasty cloudiness due to the lack of filtration. A surprisingly cheeky nose of wild strawberry and redcurrant, very fresh and accessible. The palate is vibrant with lots of raspberry and traces of rhubarb, the exciting interplay is flanked by delicate yeast tones and a wonderfully present acidity and ensures an impressive race and class that only the Lambrusco grandmaster Christian Bellei can conjure up in the bottle! “Case Vecie” Valpolicella Superiore DOC 2021
Valpolicella Superiore Case Vecie is made mainly from Corvina and Corvinone grapes. It takes its name from the vineyard of the same name in Grezzana, where the ripening of the grapes is subject to strong temperature fluctuations between day and night: a climatic peculiarity that gives the wine a special spiciness on the nose and a completely unique polyphenol profile. “Tirrenico” Rosso Maremma Toscana DOC 2020
Tirrenico comes from the west coast of Tuscany. Rich, dark ruby red colour. Rich bouquet of dark fruit, maquis, stone fruit and some fig, hints of flowers and lavender. Fleshy and juicy on the palate, with a fine acid wire and subtle flavours of berries, dried flowers and coffee. The tannins are polished and the final is finely spiced with a full, round finish.
