Radice is produced using the Pét Nat method (Metodo Ancestrale) and therefore undergoes a second fermentation on its own yeast after bottling. This naturally cloudy, dry frizzante impresses on the nose with notes of rhubarb, a fresh citrus flavour and a hint of bread. The persistent, fine perlage and its drinkynature make it a racy accompaniment to savoury, spicy antipasti, light meat dishes or simply a lively celebration in the midst of nature and cheerful people. Laura Bianchi's Monsanto Rosso is a 100% Sangiovese and comes from the vineyards in the south-western part of the estate, where Galestro (friable marl) combines with a marked concentration of tufa, a volcanic seabed that releases fossils from the Cretaceous period over time.
