A wonderful and completely "unplanned" wine: Paolo actually wanted to plant more Moscato vines in this small 1.5-hectare, sustainably cultivated vineyard when he recognised the quality of the Barbera grapes ripening there in 2016. Without further ado, he decided to vinify a Barbera, which he then aptly named "Per Sbaglio" - which means "by mistake". We congratulate him on this decision, as just 3,000 bottles are released onto the market every year. Rich, sparkling ruby red colour. It is very rare and highly commendable that a pure Nerello Cappuccio is bottled here, when the Nerello Mascalese is usually the red top dog on Etna. "Zero Infinito" stands for zero chemical intervention and infinity. Years of research and experimentation have led to this extraordinary project, in which the grapes of the fungus-resistant Solaris grape variety are transformed into wine without any additives: no treatment in the vineyard, no use of sulphur dioxide, no commercial yeasts, no clarifying agents, no filtering and no antioxidants! The grapes for this sparkling wine made according to the Méthode Ancestrale (Pet Nat) with yeast lees come from the south-west facing Maso Rella vineyard, which lies at an altitude of 800 to 900 metres.

There are no fixed rules at Zýmē, only the pursuit of experimentation to offer a unique and honest experience that also conveys the character of each individual vintage. Il Bianco From Black to White (sealed with a glass cork) opens with a golden colour and a whitish sheen typical of grapes that have no skin contact. The predominant grape variety is Rondinella Bianca, a mutation that was only discovered by chance in the vineyards of Zýmē and is unique in Italy.

The fresh bouquet has aromas of citrus fruits, honeydew melon, star jasmine and sour grapefruit. The palate is uniquely different, but silky and very flavoursome with a medium body, while ripe apples and nectarines are stimulated by juicy acidity and a hint of green citrus fruit.
