Monte Carbonare comes from red volcanic iron soils with plenty of black basalt in the centre. Six hectares of 60-70 year old vines in cooler sites, which continue to rise to the crème de la crème of the top sites as the climate warms. A richer wine than the younger Classico, but without the same cheeky vitality. While the Classico is an unbeatable everyday wine, the Monte Carbonare is a complex wine that demands food and a little more contemplation. Mirabelle plum, apricot pit, a hint of dried mango and plenty of smoky, sharp mineral grip, with dutiful freshness that brings marvellous length. SUPERIORE.DE

The Serpara is elegant, intense and long-lasting every year. Its grapes come from a single vineyard and the wine matures in a combination of new and used French Allier oak barrels. In the glass, it exudes aromas of blackberries, tobacco, sage, thyme and a hint of smoked meat. It has a soft, almost creamy texture and juicy acids that keep the balance, while ripe black fruits and minerals move effortlessly across the palate. The Vigna del Sorbo vineyard is located directly in front of the winery. The south-west facing vineyard with Galestro soils covers 8 hectares at an altitude of 450 metres. The Riserva was first produced in 1985 and has been labelled Gran Selezione since the 2010 vintage.

Dark ruby red with light red highlights. Deep and initially unfathomable on the nose. But any spirit of discovery will be enchanted when it opens slowly and very balanced with red cherries, redcurrants, earth, sage and liquorice, revealing more facets with each passing minute. Finally, the mouthfeel shows a similar degree of extreme flavour balance with very fine but still young tannins. This medium-bodied structure, coupled with the wine's natural acidity, is an important guarantee of its great longevity. This wine naturally benefits from many years of experience and the identity of Vigna del Sorbo is well established. I tend to favour the Vigna del Sorbo because I particularly appreciate the mineral notes of pencil and iron ore that I find so appealing. Pacentis Vecchie Vigne is still one of the most modern wines of the sun-drenched appellation in southern Tuscany. Its fruit comes from old vines that are between 35 and 50 years old. You can taste the richness and smoothness of its dark fruit and the lush blackberry. However, the wine also offers hints of exotic spices, spicy tobacco and even a hint of talcum powder or buttered popcorn that comes from the oak (it is aged for 24 months in French barriques).
