The grapes for Ricasoli's classic come from a south-facing plot at an ideal altitude of 250 to 450 metres above sea level. The grapes come from the two estate-owned vineyards Pian di Fiora and La Vigna del Palo. Pian di Fiora is the cooler site with just 5 ha, the grapes are destemmed by hand and then fermented in 500l clay amphorae. The grapes from the east-facing vineyard La Vigna del Palo are fermented in open 500l barrels. The wines are then blended and matured in 300l barriques for a further 10 months before facing a further 22 months of bottle ageing.
