Balduccio is made up of around 9,000 organically cultivated olive trees, all located on the picturesque Montalbano hills between Florence and Montecatini Terme, and an oil mill that is so popular with local farmers that the most popular dates for pressing between 15 October and 15 November have been fully booked on the waiting list since the summer. This is because Balduccio not only presses its own olives, but also makes its modern technology available to other olive producers. Over the last 20 years, Balduccio has gained recognition and respect as an oil mill among local producers. It is not only the customers who are impressed by the quality. The ambition to produce top-quality oils is also increasingly inspiring other olive growers.

And the truly excellent quality of the Balduccio extra virgin is no coincidence. The Montalbano terroir produces high-quality, aromatic olives. However, the transformation of the natural qualities into a clean, fruity olive oil typical of the terroir is only possible because Andreas März and his sons have been working for years on improving the quality of olive oil and consistently putting their findings into practice.

The Balduccio oil has a subtle aroma of green almonds, artichokes and fresh, green olives; in the mouth, thanks to the high Moraiolo content, it tastes strong and full-bodied, green-fruity and actually only subtly bitter; the best comes at the end: an impressive pungency, given by the extremely high polyphenol values of this vintage. Here is one of the most serious and at the same time most exciting sparkling wines that can be made from the Sorbara variety! Pale to dusky pink in colour with a fine foam and accentuated, persistent perlage. The bouquet is almost magical and yet very distinguished, with hints of raspberry and wild strawberry, which is what makes a top-class Lambrusco, but still seems to be an unattainable goal for many local winegrowers. The "25 Anni" from Caprai has been THE ambassador for Umbria's top wines for many years. It captivates with a beguiling bouquet that combines black fruits with citrus fruits, exotic spices, a hint of oregano, menthol and a hint of cocoa. The texture is more like pure silk that lays delicately across the palate, leaving a satisfying mix of intense dark fruits, minerals and fine-grained tannin. Badia a Passignano is always one of the many highlights in the Antinori range and is probably the estate's most refined and elegant Sangiovese. Its character is medium-bodied and supple, but with plenty of fruit intensity, which is typical of the vineyard of the same name. It skilfully strikes a balance between richness and finesse, captivating from the very first sip. Lavender, mint, blue-purple fruit and liquorice are beautifully brought out. "Here's a wine that offers you a full dose of Tuscan grapes. This expression is an attempt to protect some of the lesser known grapes of the region. Feudi di San Gregorio's DUBL project was born in 2004 out of an awareness of the great richness of the indigenous vines of the Irpinia region and the desire to open up new horizons for them: as Metodo Classico Spumante or by means of the famous Méthode Champenoise. A consultant was quickly found for this - none other than Anselme Selosse, who is known for his champagnes and his flair for the specialities of the vines and vineyards.

A quarter of the base wines for this top product are aged for 6 months in oak barrels, after which the cuvée matures for two years in the bottle on the fine lees before being disgorged. Strong light yellow colour and a super-fine perlage. On the nose, light-coloured fruit, yeasty notes and nuances of fresh bread. Gioia del Colle is an Italian municipality near Bari and probably the most famous DOC for Primitivo wines. The wines from this appellation embody a straightforward, fresh style and are far removed from the usual jammy suspects. The vines here grow at altitudes of up to 450 metres above sea level, the nights are cooler here than elsewhere in Apulia and the wines have a racier, tighter style and more structure than their namesakes.

Colpo di Zappa is a beautifully articulated Primitivo that brings out the fruity richness of Puglia and the intensity of the dark fruit, but all with appropriate intensity. This is no easy task for a region where the ripening of the grapes is never a problem. The trick is to allow the ripening to proceed slowly in order to preserve the wine's more subtle nuances. Dark fruit with earthy tones of dusty terracotta and beetroot in the background, plus aromas of tar and liquorice. Solid and firm on the palate with flavours of dark cherries, wild roses and cassis. The classic Habemus with its white label is probably the most famous wine of the exceptional Roman winemaker Emanuele Pangrazi. "Refining a bottle for 12 years means having 12 vintages in your own underground cellars at the same time. How can you recognise them? How do you emphasise the complexity of such a special wine? In addition, the decision not to use the label emphasises the complexity of the wine.
