Passito Bianco di Noto DOC 2023 dolce (BIO)
The grapes are harvested at the end of August when they are well ripe and then dried in 5 kg crates at 23⁰C in the fruit cellar. After about 40 days, when half of their weight has been lost, the grapes are pressed and the resulting must, which is particularly rich in sugar, ferments slowly at 18°C for over a month in stainless steel vats, where it remains until bottling.
Light golden yellow, fine bouquet of orange blossom, some quince, apricot and peach. Sparkling on the palate with surprisingly lively acidity, spreads nicely, in the long final again orange peel and some grapefruit. SUPERIORE.DE

The pioneer of Riesling on Italian soil is Aldo Vajra. Already fascinated by the variety as a student, he planted the first vines of the White Riesling variety in the Langa. “Bernardina” Nebbiolo Langhe DOC 2022 (BIO)
Bernardina is a wine with an interesting history. The Bernardina vineyard was once part of a 600-hectare estate belonging to a noble family who did not care much for wine. When the appellation boundaries for Barolo were established, this family never lobbied to become part of the area now registered for the production of Barolo DOCG. Today, the vineyard is managed by the Ceretto family, who have instead focussed on the production of Nebbiolo d'Alba. Nebbiolo d'Alba is an appellation in which the grapes from the Barolo and Barbaresco wine regions have been declassified and which is becoming increasingly popular.
Fragrant and floral with aromas of rose petals, violets and wild berries. The finish is polished and clean with hints of smoke, liquorice and tar. The wine has had a short maturation period in barriques, which gives it impressive complexity and length. SUPERIORE.DE

“Villa di Capezzana” Rosso Carmignano DOCG 2020 (BIO)
Villa di Capezzana is considered one of the longest-lived wines in Tuscany, with a vertical tasting of 20 vintages dating back to 1937 - none of the vintages showed any signs of fatigue. The wine is fermented spontaneously and matured in large and small wooden barrels, a third of the small wood is renewed every year. Dark ruby red in colour. Trebbiano Toscana IGT 2023 (BIO)
Capezzana's Trebbiano blossoms in the glass with a sweet floral bouquet of crushed yellow apples, peaches, aniseed, sweet sage and dusty stone. It is round and supple, with a depth of ripe white stone fruit perfectly contrasted by salty minerals and a hint of spice. The fresh acidity provides a nice balance. Wonderful, single-variety organic olive oil made from 100% Coreggiolo from Tenuta Fontodi. Careful farming is the origin of this fine olive oil. 400 olive trees grow per hectare of olive grove and only 1,000 bottles are filled in 500 ml format. The olives are picked by hand and gently pressed on the same day to preserve their authentic freshness. The result is an olio that is rather restrained and delicately fruity in flavour, but still has an extraordinary complexity with herbal notes and distinct bitter tones. “Campo della Pieve” Vernaccia di San Gimignano DOCG 2023 (BIO)
The Campo della Pieve vineyard (approx. 380 metres above sea level) faces south-west and has thicker soils and more tufa. The most recent parcel, which was recently acquired, is the highest to date at 400 metres above sea level. The site is more susceptible to wind and has good water retention thanks to the heavier clay soils.
Bright, light golden yellow colour. Delicate nose of fresh yellow apple, some peach, lemon balm, flint in the background. Round and smooth on the palate with a lovely balance between acidity, freshness, citrus and tropical fruit, plus a subtle minerality. In keeping with the characteristics of the Vernaccia grape, the wine is not overly fruity, but displays an exciting spiciness that lends it personality and an additional arc of tension. SUPERIORE.DE
