The Metodo Classico from COS, produced in very small quantities, is a real rarity. After fermentation in terracotta amphorae, it matures on the fine yeast for at least another 18 months in the classic champagne process before it is then disgorged without adding any dosage. Sangioveto, which consists of 100% organic Sangiovese, is grown in cool locations at an altitude of 260 to 370 metres with a south-westerly exposure. In the past, Sangiovese was called "Sangioveto" or "San Zoveto". It represents a refined expression from this particular part of the appellation and a very faithful interpretation of the Tuscan grape.
