“Zero Infinito” Metodo Ancestrale IGT 2022 (BIO)
"Zero Infinito" stands for zero chemical intervention and infinity. Years of research and experimentation have led to this extraordinary project, in which the grapes of the fungus-resistant Solaris grape variety are transformed into wine without any additives: no treatment in the vineyard, no use of sulphur dioxide, no commercial yeasts, no clarifying agents, no filtering and no antioxidants! The grapes for this sparkling wine made according to the Méthode Ancestrale (Pet Nat) with yeast lees come from the south-west facing Maso Rella vineyard, which lies at an altitude of 800 to 900 metres.
Bright yellow with orange reflections. Aromatic bouquet of elderflower and mountain flowers, plus Golden Delicious, apricot and peach. “DA-DI” Bianco Toscana IGT 2023 (BIO)
The name Da-Di is derived from the Chinese and means earth/soil. DA-DI bianco was born from the intuition of the owner Virginie Saverys to rediscover the vocation of the Cortona area for the production of great white wines from indigenous grapes, and summarises all of Avignonesi's love of experimentation.
It opens intensely in the glass with floral notes of wisteria and lime, white peach and gooseberry. On the palate, the attack is precise and straightforward. Lemon peel, mint and the complexity of wildflower honey come to the fore. The pronounced acidity makes it long and elegant. Hints of flint bring back mineral notes in the aftertaste. An exciting wine with a distinct and fresh personality. Around 2,000 bottles were produced. SUPERIORE.DE

“Burdigai” Rosato Colline Savonesi IGT 2023 (BIO)
"Burdigai" is Ligurian dialect and means shrubs of the Mediterranean maquis. From a small and isolated terrace facing west, surrounded by Mediterranean shrubs, comes this truly original Rosato, which should not actually exist. Because the grape variety is unknown, it is alternatively called "Franseise" because it apparently comes from the south of France and not even the owners know the exact origin and age, nor do they know who planted the vines there in the first place. Nevertheless, the vines have been cultivated and cared for over decades and at some point the family council decided to press an independent rosé from them.
Intense coral pink, fine and original bouquet of pink grapefruit, raspberry and strawberry with subtle mineral notes. Very dry in the mouth, floral, with lively acidity and pronounced spiciness. Characteristic is the mineral-chalky impression at the back of the palate, which prolongs the wine's originality and tension. “Monte Carbonare” Soave Classico DOC 2022 (BIO)
Monte Carbonare comes from red volcanic iron soils with plenty of black basalt in the centre. Six hectares of 60-70 year old vines in cooler sites, which continue to rise to the crème de la crème of the top sites as the climate warms. A richer wine than the younger Classico, but without the same cheeky vitality. While the Classico is an unbeatable everyday wine, the Monte Carbonare is a complex wine that demands food and a little more contemplation.
