“Rimosso” Vino Frizzante Lambrusco di Sorbara DOC 2022 secco
The first alcoholic fermentation of the must takes place in steel tanks on the fine lees at a controlled temperature and after a waiting period of at least six months, the wine is bottled. The bottles remain at a constant temperature of 12°C so that the wine can undergo its second fermentation and mature on its own yeasts, which remain at the bottom of the bottle as a light sediment (note: it is not filtered!).
An animating cherry red colour with violet reflections and a yeasty cloudiness due to the lack of filtration. A surprisingly cheeky nose of wild strawberry and redcurrant, very fresh and accessible. The palate is vibrant with lots of raspberry and traces of rhubarb, the exciting interplay is flanked by delicate yeast tones and a wonderfully present acidity and ensures an impressive race and class that only the Lambrusco grandmaster Christian Bellei can conjure up in the bottle! “Il Bianco From Black to White” Veneto IGT 2020
There are no fixed rules at Zýmē, only the pursuit of experimentation to offer a unique and honest experience that also conveys the character of each individual vintage. Il Bianco From Black to White (sealed with a glass cork) opens with a golden colour and a whitish sheen typical of grapes that have no skin contact. The predominant grape variety is Rondinella Bianca, a mutation that was only discovered by chance in the vineyards of Zýmē and is unique in Italy.
The fresh bouquet has aromas of citrus fruits, honeydew melon, star jasmine and sour grapefruit. The palate is uniquely different, but silky and very flavoursome with a medium body, while ripe apples and nectarines are stimulated by juicy acidity and a hint of green citrus fruit. The tension builds with each successive glass, a slightly tropical note is added in the final, together with salty minerals and lingering spice, From Black to White also clearly expresses its deserved place in Celestino Gaspari's exceptional portfolio, because it is a white gem full of character and purity! “Glarea” Chardonnay Alto Adige DOC 2022
The name Glarea is of Rhaeto-Romanic origin and means gravel. The grapes for this mineral and very harmonious Chardonnay grow at an altitude of around 250 metres on the lower part of the Höllenbach debris cone in soils rich in limestone and gravel. Thanks to the low hillside location and the proximity to the valley floor, a unique microclimate is created here, characterised by considerable temperature fluctuations. During the day, the Glarea vineyards enjoy very warm temperatures, which are replaced by cool air masses in the late hours of the night and early morning, giving it a lovely tautness and freshness.

“Col Fondo” Prosecco Spumante di Valdobbiadene Superiore DOCG 2022 brut nature (sui lieviti)
Col Fondo has been part of the Adami product family since the early 1900s. Initially, grandfather Abele and later father Adriano bottled the wine in spring. This then began to ferment again in the warmer months of May and June, producing what is known in Veneto as "vin col fondo". The origin of the name is quickly explained: it is due to the yeasts that settle on the bottom of the bottle after all the residual sugar has been consumed, causing the wine to develop in an exciting way over time.
Exciting: Col Fondo can be drunk clear or cloudy with yeast to create new sensory experiences every time. Drinking it clear means discovering the classic notes of yeast, ripe fruit and also a light balsamic note such as mint, liquorice, thyme and eucalyptus. In this case, simply store the bottle upright and pour the wine carefully, separating it from the sediment that remains in the bottle. If, on the other hand, you prefer it cloudy with yeast, you are opting for a more original experience: the yeast aroma is emphasised, the aroma of ripe fruit lends a particularly intense balsamic note and the wine becomes stronger, richer and fuller on the palate. “Bianco d’Istine” (anfora) Toscana IGT 2022 (BIO)
The Trebbiano and Malvasia Bianca grapes for this exceptional white wine come from the Casanova dell'Aia vineyard in Radda in Chianti, the first 0.2-hectare, calcareous and clayey plot that the family bought and planted in the 1980s and then renewed in 2014. It matures on the fine lees mostly in terracotta amphorae and only a small part remains in stainless steel tanks. Total production per vintage: 2,500 bottles.

Freisa Langhe DOC 2019 vivace
The grapes for this very traditional Piedmont red wine come from selected vineyard sites on the hills of the Langhe region. The special thing about the vinification: a small part of the mash is frozen unfermented. The alcoholic fermentation in stainless steel tanks lasts about two weeks, with very little handling and agitation of the mash. Then, without the addition of sulphurous acid, the young wine is moved to a wooden barrel where the malolactic fermentation takes place. Once this is complete, the previously frozen portion of unfermented must is added and the wine is bottled in this way. A second fermentation now takes place in the bottle, whereby these are placed upright so that the yeast deposit settles on the bottom of the bottle.

Just 6,000 bottles of this extremely delicious and complex rosato made from Pinot Nero and the indigenous Petit Rouge grape variety from vineyards in the municipalities of Aymavilles and Gressan are produced every year. The grapes from these predominantly south-facing vineyards have always been used exclusively for the production of the famous Torrette.
