The classic Habemus with its white label is probably the most famous wine of the exceptional Roman winemaker Emanuele Pangrazi. Marilisa and Franco Allegrini dedicated this single-varietal Cabernet Franc from their own vineyards on Via Bolgherese to their eldest brother Walter, who passed away in 2003. The 2015 vintage marked the beginning of an even more radical focus on the terroir and the quality of the grapes. Since then, a third fewer bottles have been filled each year, resulting in a Bolgheri Superiore from the estate's own grapes from the Bolgheri core zone that is hard to beat in terms of elegance and character. The Carricante grapes for this extremely rare Etna Bianco come from phylloxera-resistant (pre-phylloxera) vines from a single vineyard on the eastern slope of Etna at an altitude of 800 metres. Only a single oak barrel is filled each year, resulting in less than 2,000 bottles per vintage.

The Viognier and Chardonnay vines grow on Caiarossa's most calcareous terroir. The grapes are fermented separately in oak barrels, matured on the lees and blended at the end, with little or no racking in order to produce the wine with as little oxygen contact as possible. The result is a precise and clean white wine that, with its beautiful volume, depth and smoothness with fragrant flavours of flowers and almonds, goes well with a delicate and fragrant pesto.
