Barolo Pira is a great, complex wine that has enormous depth and many nuances that open up further with time. It is light-footed yet wonderfully profound and has so much to offer. Gallina comes from a steep, sandy vineyard, similar to the Asili site, but with less limestone, which gives it more roundness and fullness. "The 2020 Giusto di Notri is a blend of 80% Cabernet Sauvignon, 12% Cabernet Franc and 8% Merlot and is a ripe, powerful and generous wine. The DNA of the wine has changed slightly over the years to favour Cabernet Franc (at a higher percentage) over Merlot, which has dropped from a previous high of around 35% to 40% of the blend a decade ago. The Sottimano winery has five vineyard sites, with the Pajoré site near Treiso having the poorest soil of all. These wines are therefore more elegant and mature. Pajoré is a super-classic, explosive wine, endowed with enormous depth and character. Although it has plenty of breadth and texture, it remains light on its feet. Lavender, mint, liquorice and purple berry fruits are beguiling and wonderfully lively in the glass.
