The grapes for this great Chardonnay come from vines that are over 60 years old and this is impressively reflected in the depth and complexity of the wine. The full bouquet exudes dusty white flowers and hints of vanilla pods, contrasted by crushed green apple, curry leaves and rocks. Sol is a contrasting, very complex Chardonnay expression with ripe fruit and a silky texture balanced by mineral acids and a hint of acidic citrus. These hills rise and fall like bubbles, rising from the earth and dropping to the horizon. I can imagine how fascinated a winemaker would be with each of these unique sites. This delicate, luxury Tuscan rosato has a pale pink colour with light amber reflections. The wine smells of sweet fruits such as wild raspberries and fragolina di bosco, followed by bitter almond and dried sage. Winkl is the winery's second cult wine after the iconic South Tyrolean Sauvignon, Quarz. A wonderfully accentuated wine. Emilio and Elisabetta Foradori only press 8,000 bottles of Fuoripista Pinot Grigio from the biodynamic vineyards of the Campo Rotaliano site every year. The delicate pink-coloured wine is fermented for eight months on the skins in tinajas (Spanish amphorae), where it matures slowly to reveal the delicate character of Pinot Grigio and the forgotten diversity of Trentino. Nosiola - an ancient grape variety of Trentino - was once cultivated throughout the country. Today, its cultivation is limited to the mountains and valleys of Trento. The Nosiola grape produces wines of great finesse and longevity. Elisabetta's Nosiola also gains exceptional vigour and energy through biodynamics and ageing in amphora. Give the Nosiola time and be patient: Only after sufficient aeration and at a serving temperature of around 13 degrees does this white wine reveal its full potential. SUPERIORE.DE

The Teroldego from Foradori are all a great experience. Elisabetta makes extremely interesting wines from the autochthonous grape variety from the foot of the Dolomites. And they are made purely organically and partly in amphorae. Morei (dark in Trentino dialect) is an original red wine that is true to its terroir and is irresistibly elegant and refined. Warm, dense and mineral like the soil on which it grows. Morei is protected from cold northerly winds by the nearby, abruptly rising rock faces. The rock stores heat during the day, which radiates to the vineyard at night. The soil here is very stony and therefore relatively warm, dense, dark and mineralised, just like the Morei Teroldego wine of the same name. Testamatta means something like "crazy in the head" and this name sums it up perfectly. When you know the crazy obsession with which Bibi Graetz pursues viticulture on the island of Giglio, you no longer have to wonder about the terrificand highly personalised results that Bibi has been bottling for years. This was preceded by several years of experimentation, research and a lot of hard work until the best of the over 100-year-old Ansonica vines in the rocky Serrone vineyard were finally identified. harvest is carried out exclusively by hand and each grape is meticulously selected according to quality and ripeness, which then finds its way to the wine cellar on the island. After destemming and gentle pressing under dry ice, the grapes are left to macerate for 48 hours at a low temperature before being transferred unfiltered to 225-litre barriques for fermentation, where the wine then matures for a further 12 months.

Straw yellow with golden reflections. A cooler vintage that breaks the cycle of hot vintages. A pure, fresh and lively bouquet of white grapefruit, fennel and lemon juice. On the palate, there is a great natural citrus acidity, but also a great fullness - like a volcano of freshness that shoots up vertically, with all the depth underneath. Dry on the palate, with a medium body and beautiful acidity, freshness and complexity. The flavours reflect the bouquet beautifully and lead into a medium-long finish. The small, 80-year-old vineyard of Pietrabona on the island of Giglio produces an Ansonica of outstanding quality, and so Bibi Graetz decided to vinify the grapes separately in small batches. The vines stand on a bed of rocks and granite sand less than 50 metres from the sea, resulting in a wine with a subtle aroma of ripe oranges, fine spice, flint and minerality.

Even richer, with a somewhat more exotic flavour profile and corresponding complexity than the Testamatta Bianco. Its freshness, fullness and ability to perfectly convey acidity and minerality are strongly reminiscent of a Meursault. Great complexity on the palate, walnut and white almond, blood orange, peach and apricot, guava and quince, passion fruit and passion flower. So juicy and rich and yet ethereal in its freshness. The citrus-fruity acidity is more diffuse and therefore a little better integrated than in the Testamatta Bianco. Great! SUPERIORE.DE
