Villa di Capezzana is considered one of the longest-lived wines in Tuscany, with a vertical tasting of 20 vintages dating back to 1937 - none of the vintages showed any signs of fatigue. The wine is fermented spontaneously and matured in large and small wooden barrels, a third of the small wood is renewed every year. Dark ruby red in colour. The grapes for this fine Valpolicella come from limestone marl soils in the terraced vineyards of the Novare winery. Similar to the Amarone method, the grapes undergo a second fermentation on the sweetish skins of dried grapes in March after the harvest. Conte della Vipera is a tribute to the first owners of the castle and the label refers to the 13th century chapel of St John, which is located on the estate. The vineyards are situated at an altitude of 250 to 350 metres above sea level on soils rich in fossilised marine deposits.

The sophistication of this wine is largely due to the composition of the grape varieties: fresh, vertical and aromatic Sauvignon Bianco, soft and tropical Sémillon. Straw yellow in colour with bright green reflections. The bouquet is full and broad and pleasant with notes of flowers, white fruit and pineapple, which combine with citrus notes.
