With the 2006 vintage, Monsanto's Vin Santo was released for the first time as "Occhio di Pernice", i.e. it was made from 100% Sangiovese grapes. It is only vinified in the very best years, the grapes are carefully harvested by hand in October and then placed on special racks where they rest until the beginning of the following year. After gentle pressing, the must is sealed and fermented in small oak, cherry and chestnut barrels in the Vinsantaia, where it is exposed to seasonal temperature fluctuations.

The Chimera sparkles majestically from the glass with its dark copper and garnet red reflections; the colour of the Sangiovese grape is immediately recognisable. The bouquet opens with maple syrup, brown sugar, chocolate and dried plums. On the palate, the wine is surprisingly weightless, balanced, graceful and of terrificdepth. Dievoles Chianti Classico Petrignano is the result of the endeavour to highlight the identity characteristics of particularly suitable vineyards, leading to ever more precise expressions of Sangiovese. Petrignano is the name of a characteristic area with a soil rich in minerals and stones. At an altitude of around 330 metres, rocks protrude from the ground that are typical of the geological formation of Monte Morello. The abundance of stones, the depth of the roots and the low growth of the vines result in an expressive and lush wine from this characteristic and authentic cru site.

Villa di Capezzana is considered one of the longest-lived wines in Tuscany, with a vertical tasting of 20 vintages dating back to 1937 - none of the vintages showed any signs of fatigue. The wine is fermented spontaneously and matured in large and small wooden barrels, a third of the small wood is renewed every year. Dark ruby red in colour. The Vigna del Sorbo vineyard is located directly in front of the winery. The south-west facing vineyard with Galestro soils covers 8 hectares at an altitude of 450 metres. The Riserva was first produced in 1985 and has been labelled Gran Selezione since the 2010 vintage.

Dark ruby red with light red highlights. Deep and initially unfathomable on the nose. But any spirit of discovery will be enchanted when it opens slowly and very balanced with red cherries, redcurrants, earth, sage and liquorice, revealing more facets with each passing minute. Finally, the mouthfeel shows a similar degree of extreme flavour balance with very fine but still young tannins. This medium-bodied structure, coupled with the wine's natural acidity, is an important guarantee of its great longevity. One of Italy's best sweet wines cannot be called "Vin Santo" because its high concentration means it does not reach 12% alcohol. However, this is completely uninteresting, because the aromatic, spicy forest honey notes, the sweet fruit balanced by a fine acidity and the wonderful spiciness that characterise this wine do not need any official regulations.
