L'Olionovo – this is how the farmers describe the state of the oil when it leaves the oil mill freshly pressed after the authentic stone grinding process. The Olio di Oliva Extra Vergine from the Castellare di Castellina estate is made from fruit of the Frantoio, Pendolino, Ascolane, Moraiolo and Leccino varieties. When the olives are cold-pressed, the fruit reveals its intensely bright emerald green colour. The aroma is grassy and stimulating. The flavour is fruity, of medium intensity, with a hint of artichoke. Rich in polyphenols, it perfectly reflects the authentic spicy notes of a high-quality olive oil. The tannins are well integrated, supporting the fruit and acidity and driving the flavours forward despite the obvious weight and grip. Like many Tuscan wineries, Castellare di Castellina is picturesquely surrounded by vineyards and olive groves. The Milanese publisher Paolo Panerai had acquired the feudal estate in the 1970s out of a passion for the Chianti region. With great care, attention to detail and high quality awareness, he led the production site to the top of Tuscany.
Among the award-winning wines I Sodi di San Niccolò stands out. The medieval church of San Niccolò also stands on the vineyard. The real treasure of the small church lies deep under the altar. Because in the cellars of the church the wines of Castellare di Castellina are stored. An elliptical ramp leads to the wine cellar, where the wooden barrels are stylishly illuminated.
However, quality does not come from the lowest floor, but from the vineyard itself. That's why Paolo early on opted for a very old Sangiovese clone, the Sangioveto, as well as other autochthonous varieties. The vines are planted at an altitude of up to 400 metres above sea level in very calcareous soils. The slopes are often very steep, so that in the vineyards a lot of work has to be done by hand. The location and the quality of the soil give the wines of Castellare di Castellina, full of character, a beautiful structure and a high ageing potential. Alessandro Cellai is responsible for vinification. The respected oenologist succeeds in producing traditional Chianti with modern methods.
Panerai began dealing with sustainability at an early stage. The owner of the vineyard established a small nature reserve on his property in which chemical pesticides, fertilizers and herbicides are taboo. Today, for example, rare bird species live in the biotope. The labels of the vintage wines therefore regularly show a bird species. SUPERIORE.DE
