Ipsus ferments very traditionally for three weeks on the skins and matures 50% in new tonneaux and 50% in stainless steel as well as eight months in cement barrels. On the nose, rose petals, mint, blood orange and sweet tobacco. On the palate, the 2019 vintage is denser than many other Chianti Classico and it is very grippy in the process, with its pure, blood orange-infused, lush red fruits on the characterful finish. After a few hours in the air it becomes more open, more floral and only then does Ipsus show its true and most aristocratic face and a stunningly classic structure. The 2022 Siepi is a stunning wine that appeals to all the senses with just the right amount of complexity. The wine is soft, brooding, velvety and long-lasting.
