    Occhio di Pernice means eye of the partridge and refers to the salmon red colour of this lightly vinified Vin Santo from the red grape variety Prugnolo Gentile. Dense and dark after 10 years of barrel ageing, rich in aromas of dates, dried plums and fruitcake. Sweet aroma with sensual flavours of lemon, salted caramel with warm French pastry.
